“Crack” Bars

When I was first introduced to these delicious bars, I was told they were “special K bars,” but when I made them for my department last year, I was informed that they should be called “crack bars” on account of how addictive they are.  Also, they can be made with Rice Cereal, so the have the snap, "crack"le, pop!

Whatever you call them, true deliciousness is what they are, and with all the calories you burn stirring let you eat the bars guilt-free.

  • 2 Cups sugar
  • 2 Cups light corn syrup
  • 3 Cups peanut butter (I use creamy)
  • 1 box Special K (the one with about 12 cups)
  • 1 bag chocolate chips

  • 1 bag butterscotch chips
  • Large pot
  • Two wooden spoons
  • 9x13 pan or cookie sheet with sides
  • Parchment paper (read entire tutorial)
  • Medium microwavable mixing bowl
  • Spatula
  • Measuring Cups

Line pan with parchment paper.  (I thought this would be a really good trick.  It would be easy to remove the bars from the pan, and it would be less clean-up.  Alas, there is one small problem.  The bars don’t stick to the parchment, so it’s a bit tricky to get them flat.  You either have to deal with a little lumpy bars and easy removal, or flat bars, but hard removal)
  2. Combine sugar, corn syrup, and peanut butter in large pot.  Stirring constantly, heat a little higher than medium until mixture begins to boil.

  4. Remove from heat and add Special K.  Stir until completely covered (it will seem like forever).
  5. Pour out, and flatten onto pan (this is where two spoons comes in handy).

  7. Combine butterscotch and chocolate chips in microwave-safe bowl.  Heat at 15-20 second intervals—stirring between—until completely melted.  Be careful to not heat to long or too high so you burn the chocolate.

  9. Drizzle over bars, and use spatula to spread over top.

  11. Allow to cool completely.
  12. Cut into your preferred serving size, and try to not eat too many!

  4. Thanks for all the comments! It was pointed out to me that making light of any addiction is less than classy. Please understand that I am not supporting drugs in any way--it is just a catchy name that plays on the crackle and deliciousness.

  6. These are great! I didn't use the parchment paper and had no problem getting them out of the glass pyrex I put them in. Must be the corn syrup??

  7. My roommate has celiac disease so she cannot eat gluten (wheat). We substituted rice chex (which are gluten free and have fairly the same texture) so that she could eat them as well. It worked great!
